A Step-by-Step Guide to Our Canning Process

The process of producing sardine cans, from the initial catch to final packaging, follows a meticulous and well-structured workflow designed to guarantee top-quality products
1. Sardine fishing
The company fishes for sardines in targeted areas while respecting sustainable fishing practices, uses specialized nets to limit bycatch, and transports the fish in refrigerated containers to ensure their freshness.
The sardines are sorted upon arrival to remove those of poor quality, followed by a visual inspection and tests to ensure their freshness and compliance.
The sardines are carefully cleaned, gutted, and sorted by size to ensure their quality and consistency.
Sardines can be steamed or fried depending on the recipe, then quickly cooled to preserve their quality.
The sardines are placed in the cans, often manually for a neat appearance, then covered with oil, sauce, or brine depending on the recipe.
Hermetic sealing and thermal sterilization ensure long shelf life and food safety by eliminating bacteria.
Final inspection to check the condition of the boxes and label compliance, followed by random microbiological and taste tests.
The finished products are packed in boxes or pallets for transport, then stored in temperature-controlled warehouses before shipping.
The canned goods are transported to local shipping markets or for export.
